Heavens Rose's - Golhaye Behesht
I made these lovely and extremely moreish cookies on the spur of the moment today. Totally craved something sweet with a good cup of tea that wouldn't take too long to make, but also had that all important nibble factor! Now this cookie is better known in Khuzestan, one of the 31 provinces of Iran and boarders Iraq and the Persian Gulf, it's capital is Ahvaz. This cookie resembles Nokhodchi which is a cookie made from chickpea flour. Besides being moreish, this sweet ticks the veg & vegan box!
Vavishka is a famous dish from the province of Gilan, also known as Bij Bij. There are a number of slightly different methods to making this dish. I've chosen my favourite, with minced meat. Some methods use the sour version of chicken with pomegranate and walnut paste, and other versions add fried egg on top of the minced meat version. Vavishka has a unique taste and it's origins are Russian hence it's name Vavishka. This is a dry dish, not a stew and best eaten with flat bread like Lavash.

The love of food and adding your own special flavours to a dish have made this a favourite, not only because we love pasta, but also because when you cook this particular spaghetti dish, you'll get all the crispness and similarity to the well known and loved Tahdig (crispy rice base). Persian Chicken Kebab - Jujeh Kebab
Jujeh Kebab - Chicken Kebab. Its been a wonderful couple of days with the sun shining and beckoning a need for a barbeque, but if you live in a flat then you need to improvise! And that's what I've done. I love kebabs, who doesn't! but one thing about a chicken kebab, Joojeh Kebab in Farsi, is that it does go dry quickly when barbequed. So here's my version of Persian Chicken Kebab that not only tastes like it's been on the barbeque but also keeps it's moistness as well.
