Kale and Quinoa Salad Kale is a real nutrient dense vegetable, in just one cup it has around 3g of protein and 2.5g of fiber. It also contains vitamin A, C, K and folate. Get this vegetable into your diet :) This salad is great as a side dish for dinner or even a tasty lunch. The great thing about adding kale to a salad is there is no need to cook it, keeping in more of your nutrients
