Baked Rockfish - lightly grease a broiler pan and place filet of fish on pan. Lightly cover top of fish with thin coat (1/8 inch) of mayonaise, then cover with italian bread crumbs and any other seasonings you enjoy. Sprinkle brown sugar on top. Bake at 375 until fish is flaky and falling apart and bread crumbs turn brown. Don't worry if you don't like mayo, it will bake away forming a crust with the bread crumbs and helps keep fish moist. It will not have a mayo taste.
