Glass: Rocks Ingredients: 50ml Borrago #47 Paloma Blend Infused with 1/4 Lemongrass stalks sliced, for at least 10 minutes. A squeeze of fresh Lime 100ml Elderflower Tonic Water Method: Build over Ice. Garnish: Lemongrass Stalks, Cucumber Ribbon and sprinkle of Pink Pepper Corns
Glass: Martini Ingredients: 30ml Borrago #47 Paloma Blend 60ml Pink Grapefruit Juice 10ml Rosemary Syrup Method: Wipe a slice of Grapefruit around the rim of the glass and coat in pink salt. If you don't like your drinks too salty use half sugar and half salt. Shake all the ingredients well over ice and strain into an ice filled glass. Garnish: Pink Grapefruit and Rosemary.

You are building the head, so really go for it until it is smooth and creamy. Strain into a glass and allow the top to settle before garnishing.
