Sicilian-ish pesto Super-red cherry tomatoes, tablespoon capers, teaspoon sultanas (preferably golden, soaked in cup of pasta water), handful of fresh basil & fresh mint leaves, grated parmesan, onion salt, one clove of garlic, handfull of flaked almonds, black pepper & olive oil. Blitz all ingredients in blender
Tomato pasta with scallops, pancetta & sage - pasta sauce = one garlic clove, one small onion, one tin of chopped tomato, tomato puree, dried oregano, pinch of sugar & salt, olive oil. Blitz in blender then cook on hob and add to pasta. Pancetta cubes or smoked bacon lardons & sage leaves fried until crispy + scallops fried in bacon fat until soft and opaque.
Goats cheese, strawberry & blueberry salad - goats cheese (the tangy aged kind with white rind), blueberries, strawberries, mixed leaves, fresh basil, fresh mint & pizza express light house dressing (or any vinegary sharp creamy dressing!).
Parsons Pistachio Pesto - roasted pistachios, fresh basil, extra virgin olive oil, parmesan, garlic, cooked white onion, salt, squeeze of lemon, cup of pasta water. Mix with cream and chili flakes for extra special pasta sauce!
Herby chicken & veg soup - chicken carcass stock, left over chicken, pasta, onion, celery, carrot, sweet potato, white potato, sweetcorn, lemon & sage salt, fennel seeds, mustard seeds, fresh parsley, fresh mint & fresh basil.
I've been making Yuk Sung for years now, it's something that's easy to cook, and very very tasty while still being relatively healthy.
One-pot chicken bake - carrots / celery / leeks / small chicken / mixed herbs / salt / slash of sherry (or cider, or wine, or massala etc) / splash of water. Bake in enamel roaster with lid on high heat for 1 & 1/2 hour. Remove lid and add bulgar wheat and more water, put chopped broccoli on top of wheat to steam, put lid back on and cook for another 30-40 mins. Serve with english mustard!
Ikea chicken meatballs and rice - carrots / celery / onion fried in butter. Add dill, salt, white pepper, pinch of all spice and mix with leftover Basmati rice. Sauce - flour / milk / yoghurt / chicken stock / cranberry sauce / vodka. Cook until thickened then heat ikea chicken meatballs and add to sauceto cook for a few minutes until thick.
Cook in paella dish then stir in cream and parmesan when cooked.
Savoury breakfast bars. 2 small or 1 large sweet potato (cooked flesh) mixed with 2-3tbsp smooth peanut butter, 2tbsp hard grated cheese (the non-refrigerated stuff in a shaker!), 1tbsp honey, 1tsp tomato puree, 1tsp sundried tomato puree, 1/2tsp onion salt, pinch of regular salt + 1 large egg. Mix until a paste, add 150g Sunflower seeds, 150g pumpkin seeds, 50-75g walnuts + 100g crushed cornflakes. mix thoroughly, add to a grease-proof paper lined tray. cook for 30 minutes. cut when cool!
