Southwest chicken and rice •10-12 chicken tenders (cut into bite sized pieces) •1 1/2 c water •1 packet taco seasoning (or 2 Tablespoons of the homemade kind) •1 can Rotel •2 c instant white rice •1 c shredded cheddar cheese. cook chicken, add water, rotel, taco seasoning. bring to a boil. add rice, cover and sit about 5min til water absorbs. stir, top w/ cheese. cover and melt cheese & serve. -optional- top w/ let, tom, sour crm.
