Chicken, cheese and spinach muffins Note: High protein, low carb, low cal Ingredients (16 muffins): 200g fresh spinach (washed) 200g feta light 200g cottage cheese 800g chicken breast/filet (raw) 2 egg, 2 egg whites, salt & pepper Put all ingredients together in a food processor and blend/mix together, season w/fresh black pepper and salt Divide the mixture over 16 cupcakes Bake for 30min at 180°C in a pre-heated oven. Remove from pan & put back in the oven at 200°C for 10 min

on tonight's menu was a simple old time favourite Creamy Chicken and Veggie pie, but with a few tweaks I turned this into a thermomix meal and created a "healthier" cream instead of the usual dairy option.
