Preserved Lemon & Rosemary Sourdough Bread This bread is so good, I almost don’t want to share the recipe. Recently, R very kindly gave me a jar full of lemons he had preserved. They smell absolutely heavenly, and I find them almost as addictive as the scent of truffles (and that’s saying something). I wanted to do something different with these lemons, as although tagines are delicious, I just felt like there was something more to be done with them. Lazarus didn’t fail me.

Vegan Kimchi Stew - Based on Kimchi-jjigae 김치찌개 I love making fermented foods at the best of times, but few are more rewarding than kimchi. I like to make huge batches of the stuff during the winter. As delicious (and nutritious!) as it is on its own, however, it is also a versatile ingredient to be added to soups and stews.

Feta, Prune, Chilli & Coriander Sourdough Stuffed Bread Inspired by Turkish pide, these breads make for a flavourful and comforting weekend lunch fresh out of the oven, or a wonderful treat for picnics. If you are lucky enough have a dough hook or mixer, they involve hardly any work at all. The dough can be prepared in advance and frozen.

Real Fast Food: Bean Salad My great grandfather, Francesco Contaldo, lived for over a century. As well as the benefits of the good sea air, I am sure a good part of his longevity was owed to his frugal diet that seldom consisted of more than pulses and good olive oil. This recipe is a nod to him. This meal is cheap, easy, quick-to-make and full of protein. Salvia Elegans, or Pineapple SageNative to Mexico, you can see where this herb gets its name. Pineapple sage grows well here in the UK, and the leaves and flowers are an underrated ingredient in the kitchen.Dried, as above, the plant makes for a particularly beautiful tea. The red flowers make a lovely addition to clear, amber-coloured jellies, and work particularly well in dandelion jam or crab apple jelly. As with other members of the Salvia family, the herb is packed full of active ...

Foraging adventures: wild juniper and the first heads of wild garlic Juniper is becoming increasingly rare in the UK, so if you are lucky enough to spot some, leave it alone!

Three Jewel Muffins Muffins are one of the many foods that suffer from mass production. All too often, shop-bought muffins are expensive, packed with sugar, and utterly insipid. The sad thing is that they are incredibly easy to make. I have used fresh blueberry, morello cherry and candied angelica in these, but you can basically substitute for whatever flavourings you like.

Quince & Apples Slow-Poached in Red Wine, Blood Orange Juice and Spices There is no type of cooking that I love more than the kind of cooking that involves making something out of nothing, and it never better than when the ingredients are completely seasonal. In this case, I was left with some rather sorry looking quinces and apples at the end of the week, a glass of wine I had neglected to drink the night before, and a strong desire for a heartwarming pudding to usher in the weekend.

Leftover Pasta Dough Dumplings & Dipping Sauce I fancied doing something a bit different with my leftover pasta dough, so made them into some gyoza-style dumplings. Panzanella: Panzanella is the apex of frugal, seasonal food. It makes the most of the delicious, fresh ingredients of an Italian summer, and turns a potential waste product into a hearty, nutritious meal. I wouldn’t usually buy tomatoes or peppers at this time of year, but as they were in my veg box, I wanted to make the most of them. I have also added mozzarella, mostly to set off the colour balance (a meal begins with the eyes, after all), but they soften some of the more acerbic ...

Fresh LinguineI had a bit of dough left over from making the cannelloni, so made some delicious fresh linguine for today’s lunch. Linguine means ‘little tongues’ in Italian, which is a reference to their shape. Shop-bought “fresh” pasta is an invention that you just won’t find in an Italian supermarket. Why? Because, if you want it fresh, it is incredibly easy to make at home. You don’t have to be Italian to do it, either. The dough can be prepared ...
