Amalfi lemons To make Limoncello Pare zest from 5 unwaxed lemons, (no pith) put in large jar. Pour over 1 litre vodka. Cover with tight fitting lid, leave for 1 week, shaking jar daily. Put 750g caster sugar in heatproof bowl and pour over 700 ml boiling water. Stir until sugar dissolves. Add vodka and peel. Leave for 2nd week, shake jar regularly. Strain into decorative bottles, add few strips of lemon zest to each bottle. Delicious chilled or over icecream. Next departure 7 May 2016 .
