Sweet Potato, Broccoli & Cheddar Patties: 1 large sweet potato, 2 c broccoli, 2 oz cheddar cheese, salt & pepper. Bake sweet potato in oven until soft. Scoop out potato into bowl. Chop up broccoli, mix in potato, add cheddar cheese, salt & pepper. Make 6 patties. Add oil to pan, bake at 400 for 30-40 minutes, turning halfway.

You're going to LOVE this Super easy One-Pan Veggie Fajita Pasta! Just 20 minutes and one dirty dish… this meal is a dream to make!!!

- 2 cans of tuna in water ( drained) - 1/2 c. of quick oats - 2 large eggs  - 1/2 c. Plain low fat Greek yogurt - 1/2 Tsp. of sea salt - 1/4 Tsp of ground black pepper - 1/2 c. of parsley  - 2 Tbsp. of olive or coconut oil DIRECTIONS - Mix all ingredients in a bowl except for the oil. Heat the oil in a large non stick skillet over med-high heat. Measure out 1/4 c. of mixture for each cake. Fry cakes 2 min. on each side or until golden brown. Enjoy !!
