Since we& in the middle of a heatwave here in LA, this drink is on the menu all weekend long. This sparkling cucumber mint gin is the ideal cocktail to sip outside during these hot summer nights as you wait for the sun to set and the sky to turn orange.

Ingredients: 4 cups ice 1 cup chilled pineapple juice 1/2 cup blue curacao 1/2 cup rum 1/2 cup cream of coconut 4 pineapple slices 4 maraschino cherries Directions: Place the ice, pineapple juice, blue curacao, rum and cream of coconut into a blender and puree until smooth. Divide evenly among 4 glasses and garnish each with a pineapple slice and a cherry.
