Finally got a snack stick recipe that I love.

I started with Bear Carver's recipe for his Bear Loaf, and did several mods to it untill I have what I like for a very good flavored snack stick.

Best Beef Sticks Recipe:  2 pounds of beef (or any meat type) 1 cup of water 1/4 teaspoon of garlic powder 1/4 teaspoon of onion powder 1 teaspoon of liquid smoke 2 teaspoon of mustard seed 4 teaspoons of curing salt

Pepper’s Pepperoni Jerky Recipe    Ingredients:    1 1/2 pounds of ground beef (or any meat type)  1/8 teaspoon of garlic powder  1 teaspoon of paprika  1 1/2 tablespoons of Morton’s Tender quick salt  1 tablespoon of fennel seed  1 tablespoon of crushed red pepper    Directions:    Mix ingredients thoroughly. (recipe will make about 4 sticks)  Form sticks  uncovered 24 hours .  Bake on wire rack for 60 minutes at 300 degrees.  Link includes many other recipes for different types of meat…

Beef Snack Sticks - I have used this recipe with great success - (Not the link on the pic) http://www.dakotahsausagestuffer.com/Articles.asp?ID=363 * We don't even grind the meat/fat any more, just buy lean hamburger, because it is the right ratio of meat-fat. I'm serious! Let me know if you try the Dakota recipe - we double the spices, too, and just use sugar instead of the corn syrup solids. We also add a bunch of mustard seed. We have an electric smoker.
