Croatian stuffed peppers, or punjene paprike, as they are called in these here parts, are total comfort food, and so easy to veganise. The sweetness of the peppers, combined with the savoury, slightly spicy filling, and the thick, rich tomato gravy, makes this almost a satisfying meal by itself… but couple them with fluffy mashed potatoes, and I tell you, it’s Heaven on a plate.
