Collard Greens, Turnip Greens, Mustard Greens and/or Kale. Note from Debbie: I use chicken broth instead of water to cook greens. I also fry 2 slices of bacon until crisp & sprinkle into greens, then add 2 TB of butter. Also, if greens taste bitter, add a tsp of sugar-you don't want them to taste sweet, the sugar just covers a bit of bitterness. My hubs wouldn't eat greens until he tried mine-now he likes them.
