Lebanese Meat Pies (fatayar). The raw and the cooked.

Lebanese meat pies, or fatayar, are delicious little triangles of dough baked golden brown. My recipe for the dough and filling is terrific and clear-cut!

These "Arab pizzas" called lahm bi ajin date back to the fifteenth century and would have appeared in the region of the Beqaa Valley in Eastern Lebanon.

Lahm Bi Ajin (or Sfiha)

Sfeeha probably dates back to the fifteenth century and would have appeared in the region of the Beqaa Valley in Eastern Lebanon close to the Syrian border, the capital of which is Baalbek. An Iraqi family named Haidar is at the origin of the recipe.
