Most of North Carolina is in hardiness zones 7 and 8 (I generally use as a guide). Many of my favorite veggies grow quite happily in that climate; the main thing I have to worry about is soil composition. That's one of the reasons I would do raised beds.
Chapel Hill, North Carolina has moderate climate and scenic, gentle terrain facilitate outdoor pursuits like bicycling and hiking. University of North Carolina provides academic overlay and college-town atmosphere.
