Directions  Dry rub seasonings onto tri-tip.  Preheat smoker to 180 degrees. Place tri-tip on smoker and smoke for 3 hours.  Remove from smoker and rub garlic olive oil over entire roast. Wrap with tinfoil. Increase temperature to 225 and continue to cook for 1 more hour.  Remove from smoker and let rest 10 minutes. Slice & Serve.
