Leek, Onion and Potato Soup
This has to be one of my own top of the pops favourites and has proven to be one of my most popular recipes with everyone over the years. The chilled version of this soup is a classic vichyssoise. Either way, it’s an absolute winner.
French Onion Soup
There are few things more comforting than making a real French onion soup - slowly cooked, caramelised onions that turn mellow and sweet in a broth laced with white wine and Cognac. The whole thing is finished off with crunchy baked croutons of crusty bread topped with melted, toasted cheese. If ever there was a winter stomach warmer, this is surely it!
A Terrine Of Summer Fruits (Delia Smiths Recipe) *ok this takes some work to be even remotely Paleo and I'm not even sure if it WOULD work... sub the sugar/sweetener for honey?* It just looks so darn cool and I am pretty sure I would earn some sort of gold star for just MAKING a "TERRINE".
No winter cookbook would be complete without a pancake recipe - even though Pancake Day usually heralds the end of a long winter and we can look forward again to spring. Every year there are people making pancakes for the first time, and I admit it can be a hazardous affair if you don't know the ropes. So here is my tried and trusted pancake recipe, and once you get into the swing, you can make loads extra for the freezer and try the related recipes below. You can now watch how to make…
Venison Sausages Braised in Red Wine
Bangers are bangers, but there are some bangers that are extremely special – and venison sausages are positively five-star, especially when you serve them braised slowly with herbs, shallots, mushrooms and red wine. Then all you need is a dreamy pile of light, creamy mashed potato to go with them which you can watch being made in our Cookery School Video below.
Roasted Tomato and Goats' Cheese Tart with Thyme
I always make masses of fresh tomato and basil sauce (watch Delia's How To Cook Perfect Pasta Video to use it up) and lots of gazpacho, which only tastes good when the tomatoes are very red and ripe. This is a brilliant recipe, which once you’ve made, I guarantee you will go on making because it’s just about the easiest and most sublime tomato recipe on record. It’s great as a starter or as a main course with a salad. Serve it at barbecues or any outdoor eating event (it’s even good cold on…
Spiced Chickpea Cakes with Red Onion and Coriander Salad
At the football club we're always trying out new ideas for vegetarians (ie the real ones who don't eat fish). This one's a real winner and can hold its own against any meat or fish recipe. If you're serving it as a main course, it's nice with some nutty brown rice.
