#PUMPKINRESCUE RECIPES

18,000 tonnes of pumpkin to landfill? No thanks, let's make a pie! On average we waste 18,000 tonnes of edible pumpkins at Halloween, that’s the same as 1,500 double decker buses going to landfill. Halloween might be a time for scares, but we found this needless waste a little too scary. That's why we created the #PumpkinRescue, a foodie celebration of our favourite spooky staple.

Recipe by Hugh Fearnley-Whittingstall. Adding a jar of chutney is a great shortcut to creating real depth of flavour in a curry. Use a good, spicy, fruity chutney – if it’s home-made, all the better. A good-quality ready-made curry powder or masala works well here, but including some freshly ground cumin and coriander enhances the flavour. @rivercottagehq @Hugh'sWaronWaste #wastenot #leftovers #recipes
