Easy Potato Skins. This a great recipe to use as a guide to making potato skins to your liking. I skipped the sour cream (don't like it!) and used a combo of cheddar and pepper jack cheese. I rubbed extra light tasting olive oil (instead of butter) on the skins and used sea salt. They tasted amazing! I will make these again! -AMR
