Make sloppy Joe as directed, (manwich brand already has 2 servings of veggies in every serving) but we added whatever veggies we had around such as corn, roasted tomatoes, & green beans, about 1/2 can each then topped with cornbread mixture (ours is like corn cake due to 1c. Sugar vs. 4 tbsp) and bake at 425 for the time the cornbread recipe calls for. Yummy!

Lentil casserole I saute onions (and celery if we have it) in a cast iron pan and then add 1 cup of washed lentils and 4 cups of broth. I simmer until the lentils are soft (this takes 35-40 minutes). Then I add about 2 cups of my stewed tomatoes (or a jar of my tomato sauce), a spoonful of tomato paste, chili powder, cumin, garlic, salt, pepper, herbamare (and any other spices you like). I cook this for 5 more minutes and then put grated cheese on top and pop it in the oven for 10-15 minut...
Freezer Meals on the Cheap
plop about 2 lbs. of ground beef and a bunch of onions, green peppers and carrots into a cast iron skillet and let it do it's magic. Once this is all cooked and cooled, divide into quart size freezer bags. You'll be so glad to have these on hand! Pull out to add to spaghetti sauce, sloppy joes, nachos for unexpected company... the list is endless!
