Lemon Blueberry Cake with Cream Cheese Frosting - This cake is perfect for spring/summer. Full of blueberries and a nice tang of lemon. I left out a cup of sugar in the frosting because I like cream cheese frosting to be more tangy and less sweet.
Lime and coconut cake - I added the zest of two limes into the cake batter which ended up being a good thing. I might try tripling it next time since the coconut is so much stronger in taste. It was a lovely cake though and very easy to make gluten free.
