Who is ready to use their HEB, plus a couple of Syns, for a slice of Lemon Tart with a cheesecake style base? I’ve shared with you before how I make Syn Free Lemon Curd but today I cheated and used a box of Green’s Lemon Pie filling, I just replaced some of their water on the box directions with fresh lemon juice. Ingredients to serve 6 slices for HEB + 2 or 3 syns 240g of Grape-nuts (40g = HEB) 80g Flora Pro-Active Ultra-light (8 Syns) Greens Lemon Pie Filling 1 x 70g sachet made up as directed with egg yolk and water (4.5 Syns) Method 1. Blitz the Grapenuts until they are a finer crumb. 2. Melt the Flora and mix in the grape-nuts. Give this a really good mix to ensure melted Flora coats everything. If you want to serve your cheesecake out of your tin/dish then I would line a loose bottom tin (mine was 7”) with greaseproof paper. 3. Then press crumb carefully in to make a firm base and press up to form sides with the back of a spoon and chill, or I actually freeze for a firm set. 4. Make up Green’s Lemon Pie Filling as per packet instructions and set aside to cool. 5. When the base is firm, add the lemon mix on to the cheesecake base and pop in the fridge to set. I like to make this around 4 hours before serving. 6. Top with optional lemon zest.
