Vandermeersch Bakery is definitely off the beaten track: we had to take a 20-minute metro ride to the outskirts of Paris just to get there.  And they only make their kouglof on Fridays, Saturdays, and Sundays, and it does sell out quickly from what I’ve been told, so plan accordingly.

PIZZA PILLOWS  Make FATES bread recipe, let sit for a while so mix thickens. Take a hand full of dough and add extra fate mix until workable without being overly sticky.  Place dough between 2 sheets of floured baking paper and roll til thin. Spread rolled dough with pizza sauce, use fine grater to grate some bio cheese on top of sauce, sprinkle with italian herbs. Roll up, peeling baking paper back as you go. Cu rolled log into small pillow shapes. Cook in 200C oven for ten minutes.
