This recipe was shared by a dear friend of mine, and I have been making it every summer for the past 5 years. Great way to use up an abundance of yellow squash from your garden!

I decided to make relish with all the squash I have hanging around. 4 cups grated zucchini, 3 cups finely chopped red or green bell pepper, 2 1/2 cups grated crookneck squash, 1/2 cup finely chopped yellow onion, 2-1/4 cups white vinegar, 1 cup sugar, 2 tbsp pickling spice, 2 tsp canning salt. (Optional: Pinch of red pepper flakes and 1 clove minced garlic.) Bring it to a boil, reduce heat and simmer for 10 minutes. Refrigerate for several days before using or can it and wait a couple of…
