This is a vegetable sushi made w/ caponata.In the caponata,there is a mix of garden veggies including eggplant, cherry tomatoes, celery, carrots and many more. I used a balsamic vinegar in place of red wine vinegar to add a little kick! I rolled it all shakai style. Dipping sauce is a combination of wasabi paste & white beans. It's sushi....Italian style!! Kung Pao Chicken ~Mix 2tbs oyster S 1tsp cornstarch. Marinade 1lb chicken 10min. Combine 1/4c balsamic vinegar, 1/4 chicken broth, 3tbs rice wine, 2tbs hoisin, 1tbs soy S, 2tsp sesame oil, 2tsp chili garlice S & 2tsp sugar. On hi heat add 2tbs oil. Add 4 small dry chilies 10sec. Add chicken 3-5min or til cooked. Plate. Add remaining 1tbs oil. Add 4 cloves garlic 10sec. Add 2 celery, 1/2 bell pepper & 8oz can bamboo shoots 2min. Add chicken 1min. Add sauce & boil. Add cornstarch til boil.
