Raw courgette, mint and puy lentil salad. Slice courgettes thinly with a vegetable peeler. Cook puy lentils until soft but not falling apart. Add cooked peas and edamame to the lentils and drain. Whilst still warm add dressing of lime juice, zest, olive oil, chilli and seasoning. Leave to cool then toss with courgette. Sprinkle with chopped mint, pomegranate and pumpkin seeds.
