One thing that Chinese cuisine does particularly well is make vegetables that taste really really good including a broccoli stir-fry. It's a great side dish to serve with a seared chicken breast, or some soy glazed salmon.
Potato salad: green parsley and lovage pesto (with pine nuts, parmesan, garlic and enough olive oil to make it runny), then tossing it through a bowl of still-warm boiled potatoes. Soft-boiled egg, petits pois and chunks of feta are all viable additions.
"The Best Broccoli of Your Life" aka oven roasted broccoli with garlic, lemon, and parmesan cheese. I find I don't need to roast my broccoli as long, and I use about 2 tablespoons of oil total. Then I made up the difference with parm at the end :)
