Huevos Rancheros, a Mexican and Tex-Mex breakfast offering, consists of eggs with chillies, tomatoes and peppers in burritos. It gives the English Breakfast a run for it's money!

Up the sesame oil to taste.  Taste great after  a couple of hours in fridge. Better after a day.  Best 2 days in advance.  Can't say after that,  it was all gone!  Would love to try a bit of ginger and maybe miso for added kick, but it doesn't need it. Pair with bang bang shrimp, bulgogi, lettuce wraps, etc. Definite hit,  even with non- slaw eaters.
