Marakesh vegetable curry. Did some tweaking - doubled spices, used 1 can coconut milk instead of juice, used an entire bag of soaked and cooked garbanzo beans, and coconut oil instead of olive oil. Did not have eggplant, zucchini, or almonds around so they were omitted. I plan on making this as a freezer meal in the future.
