Broccoli Soup with White Beans - Double entire recipe - don't puree - much better with texture, only cook broccoli for 3-4 minutes at most, adding at end of recipe. Mash about a third of the beans for a creamy broth texture (I use a ricer), leave remainder whole. Frozen broccoli works fine, too! Use extra lemon juice, extra garlic - absolutely delicious, SO easy, very satisfying, healthy, and a great meal with bread and salad! Yum!! my favorite soup! :)
