Deconstructed Pizza Power Bowl. This was good. I amped it up past the vegan limits, using chicken stock for the polenta and adding Parmesan cheese to the polenta as well. Used fresh mozzarella on top. Instead of pizza sauce and canned tomatoes I used my oven roasted tomatoes w/garlic and basil, from the freezer, reduced to be less juicy. Also, Lunch-to-go.
