Pumpkin Cheesecake. I make this every single Thanksgiving. SOO incredibly delicious! The only substitution is that the crust is made with a mix of 1 1/2 cups vanilla wafer crumbs, and 1 cup graham cracker crumbs. Makes all the difference.
