Skinny tomato, basil and kale crustless quiche - I don& know about kale, so I sub& with with spinach. It was great :) It took a little longer to cook - probably an hour. It will be a regular dish in my house :)
Mini quiches! This is my version of http://www.hwtm.com/recipe_box/veggieminiquiches In skillet cook sausage and onion, then kale and tomatoes. In bowl mix about 8 eggs with 1 cup milk and salt. Spray muffin Pan and line with ham slices. Fill mostly with eggs, then top off with meat/veggie mixture. Cook in oven at 325 for about 25 min. In the future add any cheese/meat/veggies you want. (Can also put in fridge or freezer for breakfast all week)

Tomato and Fresh Corn Quiche. A lovely cheesy quiche filled to the brim with grape tomatoes, sweet corn, caramelized onions, and fresh herbs. And a rich and flaky butter pie crust. The pie crust recipe was super easy as well.
