Finally a English muffin I actually love!  This is an "S" 1 1/2 Tbs of almond flour 1 Tbs of ground flax seed 1/2 tbs Parmesan cheese 2 Tsp butter or coconut oil melted. Dash of salt 1 egg beaten well 1/4 tsp baking powder 1/4 tsp Truvia  Mix all well, being sure the egg is mixed well! Put in a small baking dish (see photo) I'm guessing a bowl or mug would work.  Microwave 1 min 45 seconds. Then cut in half and toast! The toasting is a must!

Did not have brown sugar, so substituted Truvia and a touch of molasses. They were pretty good, texture was good for a low carb cookie.

Lighter Than Air Low Carb Pancakes 3 eggs 1/2 cup ricotta cheese 2 tbsp. cream cheese, softened 3 tbsp. coconut flour 1 tbsp. protein powder 1 tsp baking powder pinch baking soda cream Whisk eggs until frothy. Mix in remaining ingredients until smooth. Melt butter on hot griddle. Pour 1/4 of batter on griddle for pancakes. Cook until brown and firm enough to turn. Turn and cook other side. Serve with butter and your favorite low carb topping. Makes about 8 four inch pancakes.
