Shirvington "The Redwind' Cabernet Sauvignon 2011

In April 2006, we planted our first three acres. We started with Viognier, Cabernet Franc and Cabernet Sauvignon. The Viognier and Cabernet Franc were grafted onto 3309 Couderc rootstock, and the Cabernet Sauvignon grafted onto Millardet et de Grasset 101-14. Both were selected because they are less vigorous than other rootstocks and grow well in our rich Virginia clay.

True to its appellation, this wine possesses dark concentrated fruit flavors and robust tannins.

Mount Veeder Cabernet Sauvignon is grown on steep mountain slopes above Napa Valley and delivers bold flavors of bright cherry and wild mountain raspberry.

Terroir-Rounded pebbles on clay-limestone soil. Vinification and Maturing-Cold pre-fermentation maceration.Traditional maceration for 20 days.Matured for one year on fine lees in vats.

It has a beautiful clear red grenate colour. Its bouquet comprises hints of fresh red fruits and blackcurrant. In the palate, it reveals round and silky with a nice full structure and a long fruity finish.
