Chicken Taco Salad: I tested this for my Shrinking On a Budget Meal Plan, modifying the dressing completely (using a homemade low fat ranch seasoned additionally with taco seasoning) and using sharp cheddar for the cheese. My picky eaters devoured it!

Thai Chopped Chicken Salad: made this for dinner. Few changes: used 2 chicken thighs (marinaded overnight and grilled), added a handful of chopped cilantro to the salad, doubled the dressing and peanut sauce.
