Spinach, Onion, and Goat Cheese Omelette

Egg Puffies, servings: 3  Ingredients: •    9 eggs •    1/2 cup onions •    ½-1 cup fresh spinach •    1/2 cup chopped mushrooms •    1/2 cup chopped red bell pepper •    4 strips of bacon  Directions: oven at 350.Spray muffin tin with olive oil nonstick spray.Mix eggs together in a bowl & scramble.Add remaining ingredients and mix together. Pour mixture in muffin tins about 1/2 way.Place in oven for 10-15 minutes or until toothpick comes out clean. Feel free to top with some salsa or not.

I would use egg whites, but it's High protein omelette muffins. Great for a high protein breakfast on-the-go! Make them on Sunday night and store in fridge for breakfast for the work week. Just reheat a few seconds in microwave on way out the door!

Spinach and Mozzarella Egg Bake -- this was great.  I added some parsley and only used egg whites.  You can also add mushrooms or whatever else you have in your fridge.
