Whip 1/3 cup coconut cream until it is light and fluffy. Slowly add in 2 Tbsp melted coconut oil, 1/2 cup maple syrup, and 1 tsp vanilla extract. Fold in 1 1/2 cups of unsweetened coconut, 1/2 cup coconut flour, and a dash of salt. *I did not whip my coconut cream first and should have – this may have made the difference I was hoping for, I would also increase the amount of coconut oil to 3 or 4 Tbsp and decrease the amount of coconut flour to 1/4-1/3 cup.
