Scoop the ganache into the molds and freeze again. Pop the chocolate halves out of one tray. The other tray, you put it in the oven for a minute (at 150 degrees or so) and when it melts a bit, you quickly plop the frozen halves onto the melted-on-top halves, so they join. Harden again in freezer.
