Chestnut Veloute (Kish, Top Chef) 2 shallots, dice 1 carrot, dice 2 stalk celery, dice 3 C roasted peeled chestnut 1/4 C red wine 4 sprigs thyme 3 Qts chix stock 3 C cream S, sherry vinegar, to taste Sweat shallots, carrots, celery in pan. Add chestnuts, and cool for 5 min. Add wine and deglaze; let wine cool off Add chicken stock and thyme, and simmer until everything is soft  ~ 30 min Add cream. Remove thyme, and place mixture in blender to puree. Pour through chinoix Season to taste
