We originally had this salad at 501 on Main in Park City years ago. It was so amazing that we asked the waiter how to make the dressing. The chef was so kind and scribbled down all the ingredients. We got busy trying to mimic the flavors and we think we came really close. The original salad uses gorgonzola cheese, which if you can have cheese we highly recommend the addition. If you're looking for a new dressing this is a good one!

You won’t even miss the noodles (just like I don’t miss the cold) . • 2 tablespoons olive oil, divided • 2 shallots, diced • 4 garlic cloves, diced • 1 pound ground beef • 1 medium eggplant, cut into 1" cubes • 1 (14 oz) can diced tomatoes • 1/3 cup fresh basil, diced • 2 teaspoons salt • 2 tablespoons tomato paste • 3/4 cup coconut cream (thick cream at the top of canned coconut milk) . 1. Heat 1 tablespoon olive oil in a large saucepan over medium heat 2. Add the shallots and garlic. Sauté for a few minutes, until fragrant 3. Add the ground beef and cook to brown 4. In a separate saucepan, heat the other tablespoon of olive oil over medium heat and add the diced eggplant. Cook until soft, around 5 minutes 5.
