1 cup cooked quinoa  5 eggs  1 cup chopped bacon  1/2 cup cheddar cheese  Preheat oven to 350. Combine all the ingredients in a bowl and mix well. Scoop into muffin tins and bake for 25-30 minutes. Let cool, but serve warm. You can also bake these ahead of time and store them in the fridge, reheat in the microwave for 30 seconds whenever you need one.
