Amending this recipe to 1 cup of almond flour, 2 tsp of baking powder (not exactly paleo), 2 tsp vanilla, 1 tsp cinnamon, 2 eggs, 1/4 cup of coconut milk, 2 T of unsweetened apple sauce.  I serve mine with a fruit "salsa" of diced bananas, strawberries and whole blueberries - I think next I will blend the fruits for "syrup."
