Gluten Free Brownie Cookies! •2 1/4 cup confectional sugar (we like to make our own from raw sugar using a coffee grinder)  •1/4 teaspoon sea salt  •1 cup cocoa powder (I use raw cacao powder from Richards or any other whole food store) •3 large eggs (free ranged chickens are best) • 2 teaspoons Vanilla Extract (organic, no added corn syrup)  Notes: Make sure you spray your pans down, this is a must! Add drys to wet and whist together. Happy baking :)
