Candy Corn Cupcakes - This is my new go-to recipe for white cake and vanilla frosting. Bakery quality in the best way. My only change was to sub of the butter in the frosting for shortening because I ran out, but I think that made the texture even better.
Bake pumpkin pie without crust. Then after it is cooled, beat 30 seconds to distribute moisture. The topping is piped onto cupcakes. Can also use Sweet Potato Pie. Try adding it to whipped cream / Cool Whip to make it lighter.
