Traditional Choctaw food- Tanchi Labona: 2 cups pearl hominy corn; 2 or 3 quarts water; 2 lbs pork backbone (country ribs work well); salt to taste, approximately 4 tbsp. Have water in pot ready. Pick through your hominy corn for any debris and then rinse well before cooking. Place corn, pork, water and salt in pot and cook on low for seven to eight hours until corn is done. A slow cooker (crockpot) works well with this recipe. Remember to stir frequently to avoid corn from sticking.
