Mediterranean-Style Baked Lima Beans Gluten-Free    calls for soaking your dried lima beans at least 12 hrs. rinse, add water, simmer w bay leaf. In dutch oven heat evoo & minced garlic. add onion. add shredded carrots, then crushed tomatoes, stock, red wine vinegar, tom paste, agave, thyme, oregano, salt, nutmeg. simmer 10 min, add S&P, parsley, mint. Mix in lima beans & bake 30 min...remove lid & bake another 10 minutes to thicken.  Serve on saffron rice:)
