Korean Food: Green Onion Kimchi (파김치) -- i really need a plant-based substitute for the fish sauce.

Mandu+(dumplings) I substitute chopped green cabbage for Asian chives & use a pound of pork instead of beef/pork combo.  If no fish sauce use oyster sauce or just extra soy sauce. No tofu optional, I prefer without.   Wonton wrappers work if no gyoza(dumpling) wrappers, but are more suitable for deep fry then.   Dipping sauce is 1 part rice vinegar & 2 parts soy + tsp sugar.

verdict: probably the easiest jangjorim recipe I've found. I made a few subs, using a hunk of meat I had in my freezer (sirloin), half onion,only 2 garlics and a larger piece of ginger. I find that a larger piece of ginger cuts any meat smells.
