No Bake Chocolate Chip Granola Bars {Easy & Healthy!} -- I changed this recipe to be dairy-free and higher in protein: Instead of 2 cups of quick oats I did (1.5 cups quick oats, 1/4 cup hemp hearts, 1/4 cup unsweetened finely shredded coconut, 5 dried apricots, chopped finely), and I subbed coconut oil for butter. Follow original instructions. Sprinkle with 1 tbsp cocoa nibs and handful of dairy-free choc-chips. If I had pepitas I would have added those, too. 5 stars with the amendments!
