Balsamic Vinaigrette Although this makes a great, simple salad dressing, it is equally delicious as a marinade for meat or when drizzled on steamed vegetables. Ingredients: 3/4 cup extra virgin olive oil 3/4 cup balsamic vinegar 1 clove garlic, crushed 1/2 tsp dried oregano 2 tsp Dijon mustard Salt and pepper to taste Method: In a mason jar or other container with a tight lid, combine all the ingredients. Shake until all ingredients are combined. Refrigerate until ready to serve.
Greek Salad Dressing 1/2 cup fresh squeezed lemon juice 1/4 cup red wine vinegar 1 cup olive oil 2-3 cloves pressed or minced garlic 1 1/2 tsp dried oregano pinch of dried thyme big pinch of salt and fresh ground pepper Combine lemon juice, vinegar, oregano, thyme and salt and pepper in bowl. Using a whisk, slowly stream in olive oil and whisk into vinegar mixture.
